Homemade Granola Mini Meal Idea from Sunshine Kids

A bowl of delicious and healthy yogurt topped with homemade granola and fresh blueberries!

The other day when I walked into the Sunshine Kids classroom to pick up my son I was greeted by a delicious aroma of fresh baked granola. One of the parent helpers that day, Rachel Nichols, told me that she had looked for granola without nuts or seeds or one that was not processed on equipment  that also processes nuts and could not find one. Since she was planning on bringing yogurt, fruit and granola to class for mini meal she decided to bring the ingredients to make a wonderful granola in the classroom. She was able to employ the toaster oven and make this amazing granola. She shares her recipe below. Enjoy!

Easy granola:
2 cups rolled oats
¼ cup brown sugar
1.5 T cinnamon
1 tsp vanilla
¼ cup butter (melted)

Mix together oats, brown sugar and cinnamon. Add vanilla and mix some more. Melt butter in the pan, add oat mixture and stir to evenly coat the oats with the butter. Bake in a toaster oven at 400 for a half hour, stirring every 10 minutes or so.
